and the avocado flesh separates cleanly from the stone. To test for ripeness cradle an avocado in the palm of your hand, gently press the stem end and if it gives just slightly it is ready to use right away.

To ripen an avocado, simply leave it in your fruit bowl at room temperature and watch the colour closely. Test periodically for firmness. Once ripe an avocado will last 3-4 days in your refrigerator. You can speed up the ripening process by placing an avocado and an apple in a closed paper bag. Check daily.

It is a good idea to purchase two or more avocados at once all at different stages of ripeness to ensure that you always have a ripe and tasty avocado on hand.
